Hello, darlings. I know its been a long while. I have neglected this blog completely. It has been a journey of creating and re-creating myself. Last July 22nd, it was my birthday and it had been the first in three years that I was able to celebrate. It was memorable, sharing with family. It held such importance to myself as a growing individual as it was the day I knew what were important to me, and where I should go from there.</div>

My little one. The reason why I wake up every morning, the reason why I continue to smile and hope and thrive to find myself. Often times it is difficult as she is slightly impatient as toddlers usually are... But my little one is so loving, that each warm hug and gentle kiss melts my heart.</div>

She is the light of my life. Perhaps even the heart of my craft and this blog. She scoots herself up a chair beside me while I weigh out the ingredients and she says "Mommy, tulong ako" (Mommy, I'll help). Her favorite chore is to mix anything she sees that has a fork or a mixing utensil with it. It can be messy, and most of the time, especially when it is a paid job, I ask her to play or ask Mr. DD to carry her away to eat or play or watch Princess movies that she loves. She cries, asking for me... And comes back when she smells the sweet aroma from the oven envelop the house. She takes a peek in the oven door, careful not to get too close. I ask her for a kiss and tell her that I love her, she always answers.</div>

When it is done, and I take the baked cupcakes out of the oven, she approaches and says "Mommy, cupcake?" and I say, "Yes, baby."</div>

It was a very touching and emotional day for me, having a soft spot for babies and children. The company he works for had given help to them. I wish I had brought food for them, but I don't know if this is possible since I had only volunteered. The toddlers were adorable and sweet, and I had emotionally attached myself to a plump little boy. These were some of the cupcakes that I've given away a couple of days ago... I had been collecting numerous recipes, deciding which to bake. I am still unsure whether I liked them. I had high hopes for them, and keep on feeding them to people around me to judge. I think I'll have to tweak the recipe a bit in the future. I found them lacking sweetness. But they were soft and moist, and that is one of the things that are important when finding the perfect recipes for Red Velvet. I am hoping that Ms. Joy enjoyed hers, along with the Chocolate Cupcakes.<br />

Place muffin tins on the middle rack of a preheated 350 degree oven. Bake for approximately 20-22 minutes, rotating pans halfway through. Cupcakes are done when a toothpick inserted in the center comes out clean. April has arrived, and I find myself searching for answers yet again. I've entered the new year with high hopes of a shiny, positive year, full of baking at its best... but it seems that I can never really ask for anything and have it immediately.<br />

March has been quite an eventful month, problems arise as soon as you think they disappear in your thoughts. I've made decisions that I believe would only be for the better. People don't always respond positively.<br />
<br />
This does not mean I am quitting. In fact, I am stepping up. This might mean going back to things I should be doing, like what usual adults do. Blog posts might end up shorter, or longer, or less... But someday, I'll finally come to a point in my life where I can bake and photograph and have complete control of my environment.<br />
<br />
There are things that I have no control of -- friends forgetting, people getting sick, problems. But there is one thing I know that is constant, baking.<br />
<br />
I'm growing. I'm not hiding under the covers with a bowl of store-bought ice cream and depressed.<br />

Pancakes are one of the things I try to do for breakfast as much as I can. Pancakes are what normal happy families eat for breakfast. But I know some of us are more lazy than others to get our sleepy butts in the kitchen, so here is a part solution for that -- an Instant Pancake Mix! It subtracts the time you need to measure the dry ingredients. Just crack some eggs depending how many you're about to do, add some milk and melted butter and cook them on your stovetop! Top some fruit syrup, warmed nutella or maple syrup and viola! Pancake Heaven.<br />

We went to Subic, still a part of the Philippines. I had enjoyed the road trip immensely, looking out the window of the car, seeing buildings turn into miles of land and trees. A part of me wish the city had more trees and parks. I want to live somewhere peaceful like that, green bushes stretching on for miles, with countless trees and flowers around. It was still hot there, and I wished I was in a different country entirely. The heat was never something I liked, I love the rain and the coolness it brings along with it.</div><div class="separator" style="clear: both;"><br />
</div><div class="separator" style="clear: both;">They had planned to ride an Ultralight a sort of mini plane, giving them a tour around the scenery for either ten or twenty minutes. Many of them proudly stated that they can finally scratch it off their bucket list, not me. I have a great fear of heights. I was happy not to be a part of the team expected to fly in the air in this tiny plane with my hair whipping about like crazy. I was shocked that in the end, I was sitting on this plane of theirs with a FREE ride offered by them. It was only to circle the vicinity, so that I would not leave the place empty. They are good at what they do, because I ended up on the ground in one peace, not having any panic attacks at all. It is quite an experience, so if you would like to give it a try... The brownies were my first try at them, they were yummy but I find them a bit sweet. I ended up adding a tablespoon of cocoa to them for a bit more chocolatey flavor, I was glad I did. They had just a hint of chocolate, just as Red Velvets usually are. Ofcourse you have to lessen the flour a tablespoon if you do this. They were a nice red color as well, despite the fact that I had run out of red food coloring and had only added a tablespoon and less than a half to it. Maybe next time I would just have to lessen the sugar a bit. The white chocolate buttercream, I expected them to be too sweet to be added along with the brownies.. but they went a long great with it. A cake seem all to difficult to make for you? Cake pops is the one to make. It is messy, delicious but takes a bit of time... but when you pop these little cakelets into your mouth, you'll forget how long you've made them and might even eat all of them so quickly!<br />

The process is to bake a cake, shred it all to crumbs, dump your favorite frosting in there, mix it all up then roll it into balls. You just have to chill the balls a bit for easy dipping.<br />
<br />
I had used a one-bowl recipe for Chocolate Cake from Sweetapolita, and also her Chocolate Swiss Meringue Buttercream. My cake pops ended up light, and velvety with the crunch of the chocolate coating. You could probably pop three of them in your mouth and not get sick of chocolate yet.<br />

1 9x9" Chocolate Fudge Cake (recipe found below)<br />
1 cup Chocolate Swiss Meringue Buttercream (recipe found below)<br />
Chocolate bar/Chocolate chips (for coating)<br />
Shortening<br />
<br />
1. Cut your cake in half and rub the two of them together until everything has turned into crumbs.<br />
2. Dump your frosting with your cake and mix it well.<br />
3. Take some of the frosted cake into your (well cleaned) hands and roll them into a bowl. Place your rolled balls into a baking sheet covered with parchment paper.<br />
4. Chill them for atleast 30 minutes.<br />
5. Chop your chocolate bar, and melt them along with a teaspoon or two of shortening over a bain marie. When melted, cool it a bit before dipping your cake pops.<br />
6. Take your pops out of the fridge, and drop them into the slightly cooled chocolate. Use a spoon and fork to balance the cake pops in, and let the excess chocolate drip. Drop the now chocolate covered cake pops into the baking sheet.<br />
7. When done, you may place them in the refrigerator to prolong their shelf-life. Or eat them right then and there after the chocolate coating has set. Don't forget to share!<br />

Chocolate Fudge Cake<br />

Ingredients<br />

1 1/2 cups (180 g/6 oz) all-purpose flour<br />
<br />
1 1/2 cups (300 g/ 10 oz) sugar<br />
<br />
3/4 cup (90 g/3 oz) dark unsweetened cocoa powder (I just used Hershey's unsweetened Cocoa Powder)<br />
<br />
1 1/2 teaspoons (7.5 mL/6 g) baking soda<br />
<br />
1 teaspoon (5 mL/4 g) baking powder<br />
<br />
1 teaspoon (5 mL/5 g) salt<br />
<br />
1/4 cup (60 mL/2 liquid oz) vegetable oil<br />
<br />
3/4 cup (190 mL/6 liquid oz) buttermilk<br />
<br />
3/4 cup (190 mL/6 liquid oz) hot brewed coffee (I just added more milk/buttermilk, I don't drink coffee)<br />
<br />
2 eggs, room temperature, lightly beaten<br />
<br />
2 teaspoons (10 mL) vanilla<br />

Method<br />
<br />
1. Preheat oven to 350° F (180°C). Prepare one 9x9" cake pan.<br />
<br />
2. In bowl of electric mixer, sift all dry ingredients and add all remaining ingredients to bowl with the dry ingredients and with paddle attachment on mixer, mix for 2 minutes on medium speed (you may need the plastic splash-guard that comes with mixer) and pour into prepared pans. If possible, use a digital kitchen scale and weigh divided batter in pans for even layers. Batter will be liquidy.<br />
<br />
3. Bake for 20 minutes and rotate pans in oven. Cakes are done when toothpick or skewer comes clean–approximately 30 minutes. Try not to over bake.<br />
<br />
4. Cool on wire racks for 20 minutes, then loosen edges with a small palette knife and gently invert onto racks until completely cool.<br />

Chocolate Swiss Meringue Buttercream<br />
<br />
Yield: ~5 cups<br />
<br />
Ingredients<br />
<br />
300 grams (10 oz) chopped semi-sweet or bittersweet chocolate, melted, and cooled<br />
<br />
5 large, fresh egg whites (150 g/5 oz)<br />
<br />
1 1/4 cups (250 g/9 oz) sugar<br />
<br />
3/4 lb (3 sticks/340 g/12 oz) butter, cut into cubes and cool, but not cold<br />
<br />
2 teaspoons (10 mL) pure vanilla extract<br />
<br />
pinch of salt<br />
<br />
Method<br />
<br />
1. Melt chocolate in heatproof bowl over pot of simmering water, or in a microwave-safe bowl in 25 second intervals, stirring in between until smooth. Set aside to cool (you can scrape it out into a new container to speed up cooling).<br />
<br />
2. Wipe the bowl of an electric mixer with paper towel and lemon juice, to remove any trace of grease.<br />
<br />
3. Add egg whites and sugar, and simmer over a pot of water (not boiling), whisking constantly but gently, until temperature reaches 150°F, or if you don’t have a candy thermometer, until the sugar has completely dissolved and the egg whites are hot.<br />
<br />
4. With whisk attachment of mixer, begin to whip until the meringue is thick, glossy, and the bottom of the bowl feels neutral to the touch (this can take up to 10 minutes or so). *Don’t begin adding butter until the bottom of the bowl feels neutral, and not warm.<br />
<br />
5. Switch over to paddle attachment and, with mixer on low speed, add butter cubes, one at a time, until incorporated, and mix until it has reached a silky smooth texture (if curdles, keep mixing and it will come back to smooth). *If mixture is too runny, refrigerate for about 15 minutes and continue mixing with paddle attachment until it comes together.<br />
<br />
6. Add vanilla and salt, continuing to beat on low speed until well combined.<br />
<br />
7. Add melted chocolate and mix on medium-low speed until combined.<br />

Think of biting into the crisp cookie, and discover its chewy center. It is easy to overcook them, and you might lose that chewiness that I enjoy in them. Some of them ended up cooking in twelve to thirteen minutes, my oven rising up to 400 degrees. I regulate the temperature by opening the oven door a bit for less than a minute.</div><br />

Bake for 18 to 20 minutes, or until golden brown but still soft. Mine had baked less than 15 minutes, time may differ. I have been lazy, baking-wise due to the heat. But there seems to be no excuse, and more reasons to make ice cream. Especially this easy peasy vanilla one. No need for heating your cream, or ice baths or whatnots. Perfect for lazy bums such as moi. The result was not as creamy and delicious as my previous work, but if you aren't so picky about ice cream and just want a yummy way to deal with the heat, you gotta try this out. It is still quite yummy after all. You just have to be careful about adding the condensed milk, adding too much will be too overpowering and if you do not have additional cream or in my case, milk (I had added a bit of milk to lessen the sweetness), your ice cream might end up too sweet.</div><div class="separator" style="clear: both; text-align: center;"><br />

Whip your cream (and vanilla bean, if using) until it has body or stiff peaks. Add the sweetened condensed milk, tasting once in a while (no eggs here, don't worry). Add your vanilla extract and mix. Cover with plastic wrap and freeze. When it is thick, but not yet frozen, add in your chocolate chips then bring back to the freezer. Freeze for at least 4 hours. Take ice cream out for a minute before eating for easy scooping.<br />

The original recipe was, slightly more on the salty side. We found it lacked any chocolatey goodness, and sweetness. And I've changed it to fit our taste buds. I am not saying the original recipe is not any good, we are just so used to having ours sweet! We've been so used to having chocolate pancakes! So, adjusting the cocoa content, adding some more flour (we found it too thin to cook without messing it up taking it out of the pan), and adding more sugar, it finally sung to us. Yum yum, hello there Red Velvety goodness! I warmed up some Nutella, thinned it a bit by adding some milk, and there you go!<br />

2. Make the pancakes: Mix all of the dry ingredients (flour through salt) together in a large bowl. Whisk thoroughly to combine until all lumps are gone.<br />

3. In a separate bowl, thoroughly mix the buttermilk, eggs, vanilla, vinegar, and food coloring. Make a well in the center of the dry ingredients and add the buttermilk mixture. Stir until mostly combined. Add in the melted butter and fold gently to mix.<br />

These cupcakes were light and fluffy. I initially was scared that they did not have enough chocolate to them, the recipe I was looking at only called for a cup. So I had added 2/3 more, and a tablespoon of cocoa to be sure. I've changed so much from the recipe that it is more of my own now. They weren't very fudgey, but it was delicious! Hubby and I couldn't help but close our eyes and "mm mm!" to ourselves while devouring them. Its very hard to stop myself from taking another cupcake, I've already gained some weight and I need to cut down on sweets and rice!<br />

Chocolate Buttermilk Cupcakes<br />
Makes about 3 dozen cupcakes<br />
<br />
2 sticks butter, softened<br />
1 cup - 1 tbsp sugar<br />
1 cup - 1 tbsp packed brown sugar<br />
4 eggs<br />
1 2/3 cups semi-sweet chocolate, melted<br />
1 tbsp cocoa<br />
1 cup buttermilk (I used half evaporate milk, half full cream milk + 1 tbsp vinegar)<br />
2 cups cake flour<br />
1 tsp vanilla<br />
1 tsp baking soda<br />

In an electric mixer, cream the soft butter and both sugars until light and fluffy. Add eggs one at a time. Add the melted chocolate, and mix well. Add the vanilla and pour in half of the buttermilk. Add flour and baking soda, carefully so that it doesn't make a mess. Pour in the rest of the buttermilk and mix well until incorporated, making sure to scrape the sides of the bowl. The mixture will look fluffy and quite yummy to eat (I know, I guiltily ate some. Raw eggs and all). Scoop into muffin pan with cupcake liners, about 3/4 full. Bake at 350F for 15 minutes.<br />

Whipped Chocolate Ganache<br />
<br />
300 grams heavy cream<br />
3/4 cup chocolate chips or finely chopped chocolate<br />
<br />
Bring the heavy cream to a boil and pour over chocolate. Mix slowly until chocolate is melted and incorporated with the cream. Let it cool completely. Whip until ganache is thick.<br />

I recall my early teen years with fond memories of watching Gilmore Girls with my sister, having a bunch of desserts in front of us. This was when my love of cookie dough was born. If you watched Gilmore Girls, you would know that the girls loved it. And me being the cookie monster that I am, was intrigued by it. Cookie dough you can eat? I must have some!<br />

Although I have made some disastrous cookie doughs in my time, all of them inedible for my high cookie standards. Finally here I come with the cookie dough recipe that does not disappoint, coming from a Cookie Dough lover even!<br />

So, what must I do with it? Oh, but of course, I shall not be selfish and eat it all on my own. I do not think the people I live with could fathom the idea of eating DOUGH! So I have made my own version of Chocolate Chip Cookie Dough Ice Cream. Hubby and I wouldn't need to go grocery hopping to find this flavor anymore! We can make it ourselves.<br />

I've made this without an ice cream maker. As expected, it did not physically turn out to be as creamy looking as the commercial ones.. but this baby melts in your mouth into a smooth, sweet, incredible and very creamy ice cream. We loved it.<br />

<div style="text-align: center;">Chocolate Chip Cookie Dough Ice Cream</div><div style="text-align: center;">Ice cream Recipe made by me, Cookie dough from <a href="http://www.loveandoliveoil.com/" target="_blank">Love & Olive Oil</a></div><br />
Ingredients:<br />
Ice Cream:<br />
1 3/4 C whole milk (we use Full cream milk because we do not see "whole milk" sold in the grocery)<br />
1 1/4 C heavy cream<br />
1 vanilla bean, split and seeded<br />
A pinch of salt<br />
1 C brown sugar<br />
2 large egg yolks<br />
1 tbsp cornstarch<br />
3 tbsp cream cheese, room temperature<br />
<br />
Cookie Dough (the original recipe for this I got from Love & Olive Oil, which I follow):<br />
<br />
2 1/2 cups all purpose flour<br />
1 teaspoon salt<br />
1/4 teaspoon baking soda<br />
1 cup (2 sticks) butter or margarine, room temperature<br />
3/4 cup granulated sugar<br />
3/4 cup packed brown sugar<br />
1 teaspoon vanilla<br />
1/3 cup milk or soy milk<br />
1 cup mini semi-sweet chocolate chips (we do not have miniature choc. chips so we use the regular ones sold in the market)<br />

Note: The Cookie Dough recipes makes twice as much as you need. I opted following the original recipe, well, because I love cookie dough.<br />
<br />
Directions:<br />
<br />
Warm the milk, sugar, 1/4 cup of cream, vanilla bean and its seeds, and salt in a medium saucepan. Let the mixture heat up until it is steaming. Remove from heat, and let steep at room temperature for 30 minutes. (I used this time to measure out the rest of the ingredients)<br />
<br />
Pour 1 tbsp of cornstarch into a bowl and add a tablespoon of milk to disolve. Set aside.<br />
<br />
Whisk room temperature Cream Cheese in a different bowl, with a pinch of salt until soft, light and creamy. Set aside.<br />
<br />
Pour 1 cup of cream into a medium sized bowl, set over a larger bowl filled with ice and iced water. Set aside.<br />
<br />
Return custard mixture (milk mixture) to the burner, and heat until steaming. Slowly add the cornstarch slurry and whisk into the custard.<br />
<br />
Slowly sppon 1/3 of the warm milk custard into the egg yolks, whisking continuously to temper the eggs. After this, add the egg and milk mixture to the rest of the custard and continue to heat it up, stirring every once in a while.<br />
<br />
Let the custard boil for 3 minutes, stirring constantly to prevent it from spilling over your pot (this has happened to me once lol). Remove from heat.<br />
<br />
Pour custard through a strainer over the cooled cream. Do not stir yet. Add the warm custard to the cream cheese 2 tablespoons at a time and stir until it is smooth. Add the cream cheese mixture back to the custard base. Now you may stir it completely with the cream. Return the vanilla bean to the mixture, and stir until cool.<br />
<br />
Cover and chill in the freezer for at least 5 hours, stirring the ice cream every hour to break up ice crystals. Make sure to discard the vanilla bean.<br />
<br />
To prepare cookie dough, Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add soymilk and vanilla. Stir in flour, baking soda and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips. Cover and chill until ready to use.<br />
<br />
Stir in bite-sized chunks of cookie dough onto the ice cream.<br />

We do appreciate that its always there and always open. There are times where I do dislike them, when I have midnight cravings for Pasta or looking for a late Ice Cream dessert and they stop servicing them after 10 PM. McDo does give satisfactory and yummy food, I think everybody does love 'em some fast food.</div><div class="separator" style="clear: both; text-align: center;"><br />

I had instantly regretted choosing Mcdo. The hazelnut lacked the taste of chocolate, since they do have a bottle of nutella on their tag which is hazelnuts + chocolate basically. The white chocolate was slightly too sweet. But the triple chocolate was very nice. The cookies were crisp on the outside and chewy as you bite on them, which is perfect. They also had some flavors I haven't tried and would like to, such as Milk Tea, Strawberry and Cookies & Cream. They were priced P35 a piece, and P90 for 3 pieces, as I recall.</div><br />

Mio Gelati also has a wide range of flavors, which the hubby and I had quite some difficulty choosing which we wanted. We ended up choosing Red Velvet and er... I forgot actually, something chocolate based. The Red Velvet was simple and nice, but the chocolate one lacked something. And when it melted, it wasn't tasty at all. Actually, two and a half since the little one had a share. The soup was nice and beefy, best eaten while hot. While the meat balls were soft but had a nice bite to them, which we both liked. Before this little one was even conceived. More than three years. He would purchase slices of their cheese cakes to share with me, and we would spend time there talking. Our most favorite cheese cake is their Chocolate Cheese (Pictured above). I think it is my most favorite cheese cake so far. Unfortunately, we weren't able to order a slice that day.</div><br />

Most of our times are spent here, as Hubby and I absolutely love their milk teas. We had our time trying out other brands... but we both firmly agree that Serenitea is our favorite. </div><div style="text-align: center;">The hubhub, my love of my life, and myself had gone all the way to Ortigas to run some errands. And have dinner while we were at it, at this tiny store named "Kimbob" at St. Francis Square, beside the huge outlet for Daiso. I had initially wanted to try out their korean ice cream since my cousin, Ate (a term of endearment to say to someone older than you) Torose loved them. But hearing our stomachs grumbling and mumbling, we took it as a sign to have dinner as well.</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">If you had spend daily life with li'l ol' me, you would probably know that I have been dying to try out Ramen. I meant, the real deal, and not the packaged ones you could buy at the groceries. And Kimbob's ramen was yummy, although too spicy for me. Not to put you off, we were accidentally given the spicy bunch, when we have really ordered the mild type. But for someone who does not like spicy food, I've enjoyed this one.</div><div style="text-align: center;"><br />

</div><div style="text-align: center;">We've ordered an additional Beef Bulgogi, with the vegetables and egg. The vegetables were flavorful, in fact, I had enjoyed eating them better than the beef. The thing to it is that you have to take some beef, and add some of the vegetables with the rice and it is much much better than eating them one by one. </div><div style="text-align: center;">Korean Ice cream is slightly different than the usual ones we have here in our country. The pinipig that the mister had ordered had the usual chocolate & pinipig (which tasted very much like real nuts) coating... but when you take a bite out of it, you could see the vanilla filling, which is usual here. And, wait for it... another chocolate filling inside the vanilla one. It won him over. Unfortunately, we had devoured it before realizing that we were not able to take pictures.</div><div style="text-align: center;"><br />
